The early stages of the development of the Department of Surgery's Global Surgery Program were an outgrowth of Dr. Pollock's efforts. In 2011, he accepted a position as assistant program director of the general surgery residency of the Pan-African Academy of Christian Surgeons (PAACS) at Soddo Christian Hospital in Wolliata, Ethiopia, while retaining his Emory appointment and laying the groundwork for the Global Surgery Program. The American Board of Surgery granted approval to the program in early 2012, making it one of the first ABS-sanctioned international surgical training experiences.

Dr. Pollock began welcoming Emory general surgery residents to Soddo Hospital in 2013. He also began leading the PAACS training program at Myungsung Christian Medical Center in Addis Ababa, Ethiopia's capital. In 2016, he returned to Emory.

Back in Atlanta, one of Dr. Pollock's primary clinical locations gradually became the Atlanta VA Healthcare System, and in 2018 he was appointed chief of general surgery at the facility. In 2020, he assisted Dr. Jackson Slappy, associate chief of surgery at the Atlanta VA, in preparing the hospital for the acquisition of its first da Vinci robotic surgical system. Following the arrival of the robot in 2021, he and Dr. Slappy became credentialed in robotic surgery, and began performing robotic general surgery procedures at the VA.
